Ingredients
  

1 cup cream cheese, softened

1 cup heavy whipping cream

1 cup sweetened condensed milk

1/2 cup granulated sugar

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs (for crust)

Extra lemon zest for garnish (optional)

Instructions
 

In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

    Gradually add the sweetened condensed milk and continue mixing until well combined.

      Pour in the heavy whipping cream, followed by the lemon juice, lemon zest, and vanilla extract. Beat the mixture on medium speed until it becomes fluffy and thick.

        Gently fold in the graham cracker crumbs until they are evenly distributed throughout the mixture.

          Pour the cheesecake mixture into an airtight container and smooth down the top with a spatula.

            Seal the container and place it in the freezer for at least 4-6 hours or until it’s firm.

              Once frozen, scoop the ice cream into bowls or cones and garnish with additional lemon zest if desired.
