1 cup unsalted butter, softened (2 sticks)

3/4 cup powdered sugar

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup granulated sugar (for rolling)

1/2 teaspoon cinnamon (optional, for rolling)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      Cream the Butter and Sugar:

        In a large mixing bowl, cream the softened butter and powdered sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 3-5 minutes).

          Add Extracts:

            Mix in the vanilla extract and almond extract (if using) until well combined.

              Combine Dry Ingredients:

                In another bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture into the wet mixture, stirring with a spatula until just combined. Do not overmix.

                  Chill the Dough:

                    Cover the dough with plastic wrap and refrigerate for at least 30 minutes to make it easier to handle.

                      Shape the Cookies:
