Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Cream the Butter and Sugar:
In a large mixing bowl, cream the softened butter and powdered sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 3-5 minutes).
Add Extracts:
Mix in the vanilla extract and almond extract (if using) until well combined.
Combine Dry Ingredients:
In another bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture into the wet mixture, stirring with a spatula until just combined. Do not overmix.
Chill the Dough:
Cover the dough with plastic wrap and refrigerate for at least 30 minutes to make it easier to handle.
Shape the Cookies:
Once chilled, scoop tablespoons of dough and roll them into balls. Roll each ball in granulated sugar mixed with cinnamon (if using) to coat evenly.
Bake the Cookies:
Place the cookie balls on the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the bottom of a glass or your palm. Bake for 12-15 minutes or until the edges are lightly golden.
Cool and Serve:
Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
