1 cup of chocolate protein powder

1/2 cup of almond flour

2 tablespoons of cocoa powder

1/4 teaspoon of salt

1/2 cup of rolled oats

1/4 cup of honey or agave syrup

1/4 cup of almond butter (or any nut butter of your choice)

1 teaspoon of vanilla extract

1/2 cup of mini marshmallows (or sugar-free marshmallows for a healthier version)

1/2 cup of dark chocolate chips (70% cocoa or higher for a healthier option)

Graham crackers or protein bars (for the crust, optional)

Instructions
 

Prepare the Base: In a mixing bowl, combine the chocolate protein powder, almond flour, cocoa powder, salt, and rolled oats. Mix well until all dry ingredients are thoroughly combined.

    Add Wet Ingredients: In a separate bowl, mix together the honey or agave syrup, almond butter, and vanilla extract until smooth. Then, add this mixture into the dry ingredients, stirring until a dough forms.

      Form the Base: If using graham crackers, crush enough to make about 1 cup of crumbs. If using protein bars, chop them into small pieces. Line the bottom of a baking dish (8x8 inch works well) with parchment paper. Press the dough evenly into the bottom of the dish to form a base.

        Layer the Chocolates and Marshmallows: Sprinkle half of the dark chocolate chips evenly over the base. Top with the mini marshmallows, distributing them evenly. Finally, sprinkle the remaining dark chocolate chips on top.

          Bake: Preheat your oven to 350°F (175°C). Bake the dish in the preheated oven for about 10-15 minutes, or until the marshmallows are golden and the chocolate is melted.

            Cool and Cut: Remove the dish from the oven and allow it to cool for about 10-15 minutes. Once cooled, lift it out of the dish using the parchment paper and cut into squares.

              Serve: These protein-packed chocolate s'mores can be enjoyed warm or chilled. Store any leftovers in an airtight container in the fridge for up to a week.
