Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 small red onion, diced

2 cloves garlic, minced

1 medium bell pepper (any color), diced

1 medium zucchini, chopped

1 cup cherry tomatoes, halved

1 cup kale or spinach, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 avocado, sliced

Fresh herbs for garnish (such as parsley or cilantro)

Lemon wedges for serving

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid and is fluffy. Remove from heat and let sit for 5 minutes before fluffing with a fork.

    While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the diced bell pepper and zucchini to the skillet. Sauté for about 5-6 minutes, or until the veggies are tender but still vibrant.

          Add the cherry tomatoes and chopped kale (or spinach) to the skillet. Cook for another 3-4 minutes until the greens are wilted and the tomatoes are slightly softened.

            Sprinkle in the ground cumin, smoked paprika, salt, and pepper. Stir to combine and let cook for another minute to toast the spices slightly.

              In a large bowl, combine the fluffy quinoa with the sautéed veggie mixture. Toss well to incorporate all ingredients.

                Serve the quinoa veggie bowl warm, topped with sliced avocado, and garnish with fresh herbs. Serve lemon wedges on the side for a zesty finish.
