1 can of tuna in olive oil (drained)

1/2 cup cherry tomatoes (halved)

1/4 cup red onion (finely chopped)

1/4 cup kalamata olives (pitted and sliced)

1/4 cup cucumber (diced)

1 cup arugula or spinach

2 tablespoons fresh parsley (chopped)

1 tablespoon capers (rinsed)

2 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: grated Parmesan cheese for garnish

Prepare the Ingredients: Drain the tuna and place it in a large mixing bowl. Add the halved cherry tomatoes, finely chopped red onion, sliced kalamata olives, diced cucumber, arugula or spinach, chopped parsley, and capers.

    Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
