For the filling:

4 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

For the crumble topping:

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup nuts (walnuts or pecans), chopped

1/4 cup coconut oil or unsalted butter, melted

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

A pinch of salt

Instructions
 

Prep the Apples: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the diced apples, honey (or maple syrup), cinnamon, vanilla extract, lemon juice, and salt. Mix well until apples are coated evenly.

    Prepare the Crumble: In another bowl, mix the rolled oats, almond flour, chopped nuts, melted coconut oil (or butter), honey (or maple syrup), cinnamon, and salt. Stir until the mixture is well combined and crumbly.

      Assemble the Dish: In a greased 9x9 inch baking dish, spread the apple mixture evenly on the bottom. Then, sprinkle the crumble topping over the apples, making sure it covers them completely.

        Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the apples are bubbly.

          Cool and Serve: Remove from the oven and let it cool for a few minutes. Serve warm, optionally topped with Greek yogurt or a dollop of whipped cream.
