Ingredients

1 pound elbow macaroni

1 cup mayonnaise

1/4 cup sour cream

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon celery seeds

1 cup diced celery

1 cup diced red bell pepper

1 cup diced sweet pickles

1/2 cup red onion, finely diced

1/4 cup chopped fresh parsley

Salt and pepper to taste

Optional: 1 cup shredded sharp cheddar cheese

Instructions

Cook the Elbow Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool completely.

Make the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, garlic powder, onion powder, and celery seeds. Whisk until smooth and creamy.

Combine Ingredients: Once the macaroni has cooled, add it to the bowl with the dressing. Then fold in the diced celery, red bell pepper, sweet pickles, red onion, and chopped parsley. If desired, add the shredded cheddar cheese for an extra layer of flavor.

Season the Salad: Taste the salad and season with salt and pepper as needed. Mix well to ensure all ingredients are evenly coated in the dressing.

Chill and Serve: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled and enjoy your delicious twist on a classic macaroni salad.
