Ingredients
  

For the Grilled Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup fresh corn kernels (or frozen, thawed)

1 small red onion, finely chopped

1 jalapeño, seeded and diced

1 cup cherry tomatoes, halved

1/2 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Sauce:

1/2 cup sour cream or Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper to taste

For the Bowl:

2 cups cooked rice (brown rice or quinoa works well)

1 avocado, sliced

Lime wedges for serving

Additional cilantro for garnish

Instructions
 

Prep the Shrimp:

    In a large bowl, combine olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and pepper. Add the shrimp, toss to coat, and let marinate for 15-20 minutes.

      Make the Corn Salsa:

        In another mixing bowl, combine corn, red onion, jalapeño, cherry tomatoes, cilantro, lime juice, and salt. Mix well and set aside to allow flavors to meld.

          Prepare the Creamy Sauce:

            In a small bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, salt, and pepper. Adjust seasoning to taste and set aside.

              Grill the Shrimp:

                Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling). Grill the shrimp for about 2-3 minutes on each side, or until they are pink and cooked through.

                  Assemble the Bowl:

                    In a serving bowl, start with a base of cooked rice. Top with grilled shrimp, corn salsa, and avocado slices. Drizzle with creamy sauce and garnish with additional cilantro.
