Method
In a mixing bowl, combine the chopped green olives, softened cream cheese, Greek yogurt, lemon juice, and olive oil. Mix with a hand mixer or fork until creamy and well blended.
Add the minced garlic, thyme, red pepper flakes (if using), and season with salt and black pepper to taste. Stir until all ingredients are well incorporated.
Taste and adjust seasoning, adding more lemon juice or herbs as desired.
Transfer the dip to a serving bowl. If desired, sprinkle with feta cheese and fresh herbs for garnish.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled with pita chips, vegetable sticks, or toasted baguette slices.
