Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

¾ cup grape soda

½ cup grape jelly (for filling)

1 cup powdered sugar (for frosting)

½ cup butter, softened (for frosting)

2-3 tbsp heavy cream (for frosting)

Purple sprinkles (for decoration)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, using an electric mixer on medium speed for about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Incorporate Dry Ingredients and Soda: Gradually add the dry ingredient mixture to the wet mixture, alternating with the grape soda. Start and end with the dry ingredients, mixing until just combined.

Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Fill with Jelly: Once cooled, use a small knife or cupcake corer to remove the center of each cupcake. Fill the hole with grape jelly.

Prepare the Frosting: In a bowl, beat together the softened butter and powdered sugar. Add the heavy cream gradually until the frosting reaches your desired consistency (light and fluffy). If you want a more pronounced grape flavor, you can add a splash of grape soda here too!

Frost the Cupcakes: Use a piping bag or a knife to frost the top of each cupcake with the grape-flavored buttercream.

Decorate: Finish by sprinkling purple sprinkles on top for a fun touch.
