Ingredients

2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup dried fruits (raisins, cranberries, or apricots)

1/2 cup Greek yogurt

1 cup fresh seasonal fruits (sliced bananas, berries, or peaches)

Optional toppings: chia seeds, flaxseeds, or shredded coconut

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Dry Ingredients: In a large bowl, combine the rolled oats, mixed nuts, cinnamon, and salt.

Combine Wet Ingredients: In a separate bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet ingredients over the dry ingredients and stir until all the oats and nuts are evenly coated.

Spread on Baking Sheet: Spread the granola mixture evenly on a lined baking sheet, pressing it down slightly to encourage clumping.

Bake: Bake in the preheated oven for 20-25 minutes, stirring halfway through until golden brown.

Add Dried Fruits: Remove from the oven and let cool for 10 minutes. Once cooled, mix in the dried fruits.

Assemble the Breakfast Bowl: In a bowl, add a generous scoop of Greek yogurt, top with the homemade granola, and then layer on your choice of fresh seasonal fruits.

Add Optional Toppings: Sprinkle with chia seeds, flaxseeds, or shredded coconut for an extra boost of nutrition and flavor.

Serve: Enjoy your Crunchy Delight Granola Breakfast Bowl immediately!
