For the Muffin Batter:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.

    Prepare the Cream Cheese Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.

      Make the Muffin Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until well combined.

        Combine the Mixtures: Gradually add the wet ingredients to the dry ingredients. Stir until just combined; do not overmix. The batter may be a bit lumpy, but that’s okay.

          Fill Muffin Tins: Spoon about a tablespoon of muffin batter into the bottom of each muffin cup. Then, add a generous tablespoon of the cream cheese filling on top of the batter. Finally, top with another tablespoon of muffin batter over the cream cheese filling, covering it completely.

            Prepare the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and ground cinnamon. Drizzle the melted butter over the muffins and then sprinkle the cinnamon sugar mixture evenly over the tops.

              Bake: Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean or with a few moist crumbs.

                Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy these warm or at room temperature!
