Ingredients
  

6 large eggs

1 cup shredded sharp cheddar cheese

1 cup diced cooked ham (or cooked bacon, if preferred)

1/2 cup finely chopped bell pepper (any color)

1/2 cup finely chopped onion

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If desired, spray a muffin tin with cooking spray or line it with muffin liners for easier removal.

    Prepare the Filling: In a large mixing bowl, crack the eggs and whisk them until well beaten. Add in the milk, garlic powder, salt, black pepper, and smoked paprika. Mix until everything is combined.

      Add the Goodies: Fold in the shredded cheddar cheese, diced ham or bacon, chopped bell pepper, and chopped onion into the egg mixture. Stir until all ingredients are evenly coated.

        Fill the Muffin Cups: Pour the mixture evenly into each muffin cup, filling them about 3/4 of the way full. The egg mixture will expand while baking, so avoid overfilling.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are puffed up and a toothpick inserted in the center comes out clean.

            Cool and Serve: Once baked, remove the muffin tin from the oven and let the muffin cups cool in the pan for about 5 minutes. Carefully remove them and serve warm. They can be enjoyed on their own or with a side of fresh fruit!
