2 cups mashed potatoes (preferably leftover)

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (Italian seasoned for extra flavor)

Cooking oil spray or oil for frying

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix the Ingredients: In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, green onions, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well incorporated.

      Form the Bites: Using your hands, scoop out about 1.5 tablespoons of the potato mixture and shape them into small balls or patties. Place them on the prepared baking sheet.

        Coat with Breadcrumbs: Place the breadcrumbs in a shallow dish. Roll each potato bite lightly in the breadcrumbs until fully coated. Return to the baking sheet.

          Spray for Crispiness: Lightly spray the tops of the potato bites with cooking oil. This will help them crisp up in the oven.

            Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. You can flip them halfway through for even browning.

              Serve: Allow them to cool slightly before serving. These cheesy mashed potato bites make a perfect appetizer or a side dish, paired with your favorite dipping sauce, like sour cream or ranch dressing.
