Prepare the Chicken Bites:
- In a shallow dish, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- In another dish, whisk the eggs. In a third dish, add the all-purpose flour.
- Dredge each piece of chicken in flour, then dip it into the egg mixture, and finally coat it in the breadcrumb mixture.
Cook the Chicken Bites:
- Heat a generous amount of olive oil in a large skillet over medium heat.
- Once hot, add the coated chicken bites in batches (don’t overcrowd the pan) and cook for about 4-5 minutes on each side or until golden brown and cooked through.
- Remove from the skillet and place on a paper towel-lined plate. Sprinkle with chopped parsley for garnish.
Cook the Pasta:
- While the chicken is cooking, bring a pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
Prepare the Creamy Sauce:
- In the same skillet used for the chicken (add more oil if needed), sauté the minced garlic over medium heat until fragrant, about 1 minute.
- Reduce the heat and pour in the heavy cream, stirring to combine. Add the grated Parmesan and Italian seasoning, stirring until the cheese has melted and the sauce has thickened. Season with salt and pepper to taste.
Combine Pasta and Sauce:
- Add the cooked pasta to the creamy sauce, tossing to coat. Cook for an additional 1-2 minutes to heat through.
Serve:
- Plate a generous serving of the creamy pasta. Top with crispy Garlic Parmesan Chicken Bites. Garnish with fresh basil if desired, and a sprinkle of extra Parmesan cheese.
