Ingredients
  

1 lb chicken breast, diced

1 package (16 oz) gnocchi

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float. Drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and cherry tomatoes. Cook for about 2-3 minutes until the garlic is fragrant and the tomatoes begin to soften.

        Combine Ingredients: Return the cooked chicken to the skillet, stir in the spinach, red pepper flakes, and oregano. Cook for another 2 minutes until the spinach wilts.

          Make Sauce: Pour in the chicken broth and bring to a gentle simmer. Allow it to cook for 3-4 minutes to reduce slightly.

            Add Gnocchi and Cream: Stir in the cooked gnocchi and heavy cream, mixing well to combine. Let it simmer for another 2-3 minutes until heated through.

              Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.
