Sear the Steak Bites: In a large skillet, heat 2 tablespoons of butter over medium-high heat. Season the steak cubes with salt, pepper, and smoked paprika. Once the butter is melted and sizzling, add the steak bites in a single layer. Sear for about 2-3 minutes on each side, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside on a plate.
Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic and thyme to the pan, sauté for about 1 minute until fragrant, being careful not to burn the garlic.
Prepare the Cream Sauce: Gradually pour in the heavy cream, stirring continuously to combine. Allow the mixture to simmer gently for 2-3 minutes until it starts to thicken. Reduce the heat to low and stir in the grated Parmesan cheese until smooth and creamy.
Combine and Serve: Return the steak bites to the skillet, tossing them gently in the creamy sauce until well coated. Cook for an additional minute to heat through. Taste and adjust seasoning if necessary.
Garnish: Remove from heat and sprinkle with freshly chopped parsley for garnish.
