8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

8 oz smoked sausage, sliced (e.g., kielbasa or andouille)

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup cherry tomatoes, halved

1/2 cup spinach, chopped

1/4 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Skillet: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced smoked sausage and cook until browned and heated through, about 3-5 minutes.

      Sauté the Shrimp: Add the shrimp to the skillet along with the minced garlic and red pepper flakes. Season with salt and pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove the sausage and shrimp mixture from the skillet and set aside.

        Add Vegetables: In the same skillet, add the remaining 2 tablespoons of butter, followed by the cherry tomatoes and spinach. Sauté for about 2-3 minutes until the tomatoes start to soften and the spinach wilts.

          Combine Everything: Return the sausage and shrimp to the skillet with the tomatoes and spinach. Pour in the reserved pasta water and add the cooked pasta. Toss everything together gently.

            Finish the Dish: Squeeze the lemon juice over the pasta and toss again. Check seasoning and adjust salt and pepper if necessary. Sprinkle with fresh parsley just before serving.

              Serve: Plate the pasta hot, topped with additional parsley and grated Parmesan cheese if desired.
