Ingredients

2 large apples (such as Honeycrisp or Granny Smith)

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1 cup cold sparkling water

1/4 cup granulated sugar (for coating)

1 tsp cinnamon (for coating)

Oil for frying (vegetable or canola)

Optional: powdered sugar for dusting

Instructions

Prepare the Apples:

    - Wash and core the apples. Slice them into 1/4-inch thick rings, keeping the skin on for added flavor. Remove seeds from the rings.

      Make the Batter:

        - In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, 1/2 tsp cinnamon, nutmeg, and salt. Whisk until well-combined.

          - Gradually pour in the cold sparkling water, whisking until you have a smooth batter that is thick enough to coat the apple rings.

            Heat the Oil:

              - In a deep frying pan, pour enough oil to submerge at least half of the apple rings (about 2-3 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).

                Fry the Apple Rings:

                  - Dip each apple ring into the batter, allowing excess to drip off before gently placing them into the hot oil. Fry in batches, making sure not to overcrowd the pan.

                    - Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to flip them as needed.

                      Drain and Sugar Coat:

                        - Remove the fried apple rings from the oil and place them on a paper towel-lined plate to drain excess oil.

                          - In a small bowl, mix the granulated sugar with 1 tsp cinnamon. While the apple rings are still warm, toss them in the cinnamon-sugar mixture to coat thoroughly.

                            Serve:

                              - Optionally, dust with powdered sugar for an extra sweet touch before serving. Enjoy your crispy fried cinnamon apple rings warm, perhaps with a scoop of vanilla ice cream or a drizzle of caramel sauce!
