6-8 fresh ripe peaches, peeled and sliced

3/4 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon almond extract

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Peaches: In a mixing bowl, combine the sliced peaches with 1/4 cup of sugar, lemon juice, vanilla extract, and ground cinnamon. Toss gently to coat, then set aside to marinate for about 15-20 minutes.

      Make the Batter: In a separate mixing bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar. Slowly stir in the whole milk, melted butter, and almond extract until just combined. Do not overmix.

        Prepare Baking Dish: Pour the batter into a greased 9x13-inch baking dish without spreading it out. It will spread as it cooks.

          Add Peaches: Spoon the marinated peach mixture evenly over the batter without stirring. This will create a delicious crust as it bakes.

            Bake: Bake in the preheated oven for about 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted in the center comes out clean.
