1 cup cottage cheese (ricotta or cream cheese can be substituted)

3 large eggs

1/4 teaspoon cream of tartar

1/2 teaspoon salt

1/2 teaspoon garlic powder (optional)

1/4 teaspoon onion powder (optional)

Fresh herbs for seasoning (like dill or parsley, optional)

Preheat Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

    Blend Ingredients: In a blender or food processor, combine cottage cheese and eggs. Blend until smooth; this will give the bread its fluffiness.

      Prepare Egg Whites: In a separate bowl, add egg whites and cream of tartar. Using an electric mixer, beat the egg whites on high speed until stiff peaks form, about 2-3 minutes.

        Combine Mixtures: Gently fold the cottage cheese and egg mixture into the beaten egg whites. Be careful not to deflate the air in the egg whites; use a spatula and a gentle motion to incorporate well.

          Add Seasoning: Add salt and any optional seasonings (garlic powder and onion powder) to the mixture, then fold again until evenly distributed.

            Shape Bread: Scoop the fluffy mixture onto the prepared baking sheet in rounded mounds, about 2 inches apart. You should get about 6-8 pieces, depending on size.

              Bake: Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
