Ingredients

1 cup cottage cheese (drained)

3 large eggs

1/4 teaspoon cream of tartar

1/4 teaspoon garlic powder (optional)

1/4 teaspoon onion powder (optional)

Salt to taste

Fresh herbs for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.

Blend Cottage Cheese: In a mixing bowl, combine the cottage cheese and eggs. Use an immersion blender or a regular blender to puree the mixture until it’s smooth and creamy.

Whip Egg Whites: In a separate bowl, beat the egg whites and cream of tartar together until stiff peaks form. This is the key to achieving a fluffy texture. Be sure to use a clean bowl and whisk for best results.

Combine Mixtures: Gently fold the cottage cheese and egg yolk mixture into the whipped egg whites. Use a spatula to combine them, being careful not to deflate the egg whites. If desired, you can add garlic powder, onion powder, and salt at this stage for extra flavor.

Scoop and Shape: Spoon the mixture onto the prepared baking sheet, creating 6-8 mounds (about 2 tablespoons each). Use the back of the spoon to flatten slightly into a cloud-like shape.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cloud bread is golden brown and firm to the touch.

Cool and Serve: Once baked, remove from the oven and let it cool for about 5 minutes on the baking sheet. Carefully transfer to a wire rack to cool completely. Garnish with fresh herbs if desired.

Enjoy: Serve as a sandwich bread substitute, a base for burgers, or simply enjoy warm with some butter or cream cheese!
