Method
In a blender or food processor, combine the cottage cheese, eggs, vanilla extract, baking powder, and salt. Blend until the mixture is smooth, resembling pancake batter.
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of butter.
Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 1-2 minutes until bubbles form on the surface.
Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.
Remove from heat and serve immediately, topped with your choice of fresh fruit, maple syrup, or yogurt.
