2 English muffins, halved

4 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup diced bell peppers (red and green)

1/4 cup diced red onion

1/4 cup cooked and crumbled breakfast sausage or diced ham (optional)

1/4 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil or parsley, chopped (for garnish)

Olive oil, for drizzling

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Toast the English muffins: Place the halved English muffins cut-side up on the baking sheet. Drizzle with a little olive oil and toast in the oven for about 5-7 minutes or until they are lightly golden.

      Prepare the toppings: In a bowl, whisk together the eggs, garlic powder, salt, and pepper. Stir in the diced bell peppers, red onion, and breakfast meat (if using).

        Cook the egg mixture: Pour the egg mixture into a non-stick skillet over medium heat. Scramble the eggs gently until just set but still creamy, about 2-3 minutes.

          Assemble the pizzas: Spoon the scrambled egg mixture evenly over each toasted English muffin half. Sprinkle the shredded mozzarella cheese on top.

            Bake: Return the assembled breakfast pizzas to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
