2 English muffins, split in half

4 large eggs

1/2 cup shredded mozzarella cheese

1/2 cup diced cherry tomatoes

1/4 cup cooked and crumbled breakfast sausage (optional)

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Muffins: Place the English muffin halves on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with a pinch of salt.

      Cook Eggs: In a bowl, whisk together the eggs, garlic powder, red pepper flakes, salt, and pepper until well combined.
