English Muffin Breakfast Pizza

Ingredients
  

2 English muffins, split

4 large eggs

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup shredded mozzarella cheese

1/2 cup cooked and crumbled breakfast sausage (optional)

1 teaspoon olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Red pepper flakes, for a kick (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Muffins: Place the split English muffins on a baking sheet, cut side up. Drizzle olive oil over each half and sprinkle with a pinch of salt and pepper.

      Sauté Spinach: In a pan over medium heat, add a small amount of olive oil. Add baby spinach and sauté until wilted (about 2-3 minutes). Season with salt and pepper, then remove from heat.

        Cook the Eggs: Crack the eggs into a bowl. Season with salt and pepper and whisk until combined. In the same pan used for the spinach, scramble the eggs over medium heat until softly set.

          Assemble the Pizzas: On each muffin half, layer a spoonful of sautéed spinach, followed by cherry tomato halves. If using sausage, add it now. Top each muffin with scrambled eggs and a generous sprinkle of shredded mozzarella cheese.

            Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, add fresh basil and a sprinkle of red pepper flakes if desired. Serve warm and enjoy!
