Ingredients
  

2 cups all-purpose flour

2 cups granulated sugar

1 cup unsalted butter (softened)

4 large eggs

1/2 cup buttermilk

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

3 ripe bananas (mashed)

1 cup chopped walnuts (optional)

1 cup crushed pineapple (drained)

Cream cheese frosting:

8 oz cream cheese (softened)

1/4 cup unsalted butter (softened)

4 cups powdered sugar

1 tsp vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.

      Add the eggs one at a time, beating well after each addition. Mix in the mashed bananas and vanilla extract.

        In another bowl, combine the flour, baking soda, salt, cinnamon, and chopped walnuts (if using). Gradually add the dry ingredients to the banana mixture, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.

          Fold in the crushed pineapple, ensuring it is evenly distributed.

            Pour the batter into the prepared baking pan and smooth the top with a spatula.

              Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.

                While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, combine the softened cream cheese and butter, and beat until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.

                  Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.

                    Optional: Sprinkle additional chopped walnuts or banana slices on top for decoration.
