For the Panna Cotta:

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 tablespoon pure vanilla extract

2 1/2 teaspoons unflavored gelatin (1 packet)

3 tablespoons cold water

For the Summer Berry Compote:

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup raspberries

1/2 cup granulated sugar

1 tablespoon lemon juice

Zest of 1 lemon

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Panna Cotta:

    - In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5-10 minutes to soften.

      - In a medium saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.

        - Remove the saucepan from heat and stir in the vanilla extract and softened gelatin. Stir until the gelatin is fully dissolved.

          - Pour the mixture into individual serving cups or molds. Allow them to cool to room temperature, then refrigerate for at least 4 hours, or until set.

            Prepare the Summer Berry Compote:

              - In a medium saucepan, combine strawberries, blueberries, raspberries, sugar, lemon juice, and lemon zest.

                - Cook over medium heat until the mixture starts to bubble, about 5-7 minutes. Stir occasionally and gently press the berries to release their juices.

                  - Reduce the heat and let it simmer for another 5 minutes until the compote thickens slightly. Remove from heat and let cool.

                    Serve:

                      - Once the panna cotta has set, gently dip the bottoms of the cups in warm water for a few seconds to loosen the panna cotta. Invert onto serving plates if desired.

                        - Spoon the summer berry compote over the panna cotta. Garnish with fresh mint leaves if using.

                          - Serve immediately and enjoy the delightful combination of creamy, smooth panna cotta with the fresh and tangy berry compote!
