Ingredients

4 slices of thick bread (brioche or challah preferred)

2 large eggs

1/2 cup whole milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp nutmeg

2 tbsp butter (for frying)

2 medium apples (preferably Granny Smith or Honeycrisp), peeled, cored, and thinly sliced

2 tbsp brown sugar

1 tsp lemon juice

A pinch of salt

Maple syrup (for serving)

Instructions

Prepare the Custard Mixture: In a medium bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until well combined.

Soak the Bread: Dip each slice of bread into the egg mixture, ensuring both sides are well-coated. Let them soak for about 1-2 minutes to absorb the custard.

Cook the Apples: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced apples, brown sugar, and lemon juice. Sauté for about 5-7 minutes until the apples are tender and slightly caramelized. Remove from the skillet and set aside.

Fry the Eggy Bread: In the same skillet, add the remaining tablespoon of butter over medium heat. Carefully place the soaked bread slices in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

Serve: Place the cooked eggy bread on plates, top generously with the sautéed cinnamon apples, and drizzle with maple syrup for added sweetness.

Enjoy! Serve hot and savor the delightful combination of sweet apples and rich eggy bread.
