For the Cupcakes:

1 ¾ cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup soda (any flavor you prefer such as cola, lemon-lime, or orange)

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Icing:

8 oz (1 package) cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (if needed for consistency)

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

      Prepare the Cupcake Batter:

        In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

          Mix Wet Ingredients:

            In another bowl, mix the soda, vegetable oil, eggs, and vanilla extract until smooth.

              Combine Ingredients:

                Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

                  Fill the Cupcake Liners:

                    Scoop the batter into the prepared cupcake liners, filling each about 2/3 full.

                      Bake:

                        Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

                          Make the Cream Cheese Icing:

                            In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth. Gradually add powdered sugar, mixing until fully incorporated. Stir in the vanilla extract and add milk if necessary to achieve a smooth spreadable consistency.

                              Frost the Cupcakes:
