4 cups fresh peaches, peeled and sliced

2 cups fresh raspberries

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, lemon juice, and vanilla extract. Stir gently to coat the fruit in the sugar mixture. Let it sit for about 10 minutes.

      In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar. Gradually stir in the milk and melted butter until just combined. Be careful not to overmix; some lumps are okay.

        Pour the fruit mixture into a greased 9x13 inch baking dish, spreading it out evenly.

          Pour the cobbler batter over the fruit, ensuring it covers most of the fruit. It will spread as it bakes.

            If using, sprinkle ground cinnamon over the top of the batter for added flavor.

              Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

                Allow to cool for a few minutes before serving. Enjoy warm, with a scoop of vanilla ice cream if desired!
