Ingredients

2 cups rolled oats

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup ground flaxseed (optional)

1/2 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare Your Pan: Line an 8-inch square baking pan with parchment paper, leaving some overhang to make it easy to remove the bars later.

Mix the Wet Ingredients: In a large mixing bowl, combine creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well blended.

Add Dry Ingredients: To the same bowl, add the rolled oats, ground flaxseed (if using), chocolate chips, and a pinch of salt. Mix everything together until the oats and chocolate chips are evenly coated with the peanut butter mixture.

Transfer to Pan: Pour the mixture into the prepared baking pan. Use a spatula or your hands to firmly press the mixture into an even layer in the pan. Make sure it’s packed tightly to hold together once set.

Chill: Place the pan in the refrigerator for at least 1 hour or until the bars are firm enough to cut.

Cut into Bars: Once chilled, lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into squares or rectangles.

Store: Keep the bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
