1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 inch piece of ginger, grated

2-3 tablespoons freshly cracked black pepper (adjust to taste)

1 bell pepper, sliced (any color)

2 green onions, sliced (for garnish)

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

Salt to taste

Prep the Chicken: In a bowl, toss the chicken pieces with cornstarch until well coated. This will help achieve a crispy texture when cooked. Set aside for about 10-15 minutes.

    Heat the Oil: Heat the vegetable oil in a large skillet or wok over medium-high heat.

      Cook the Chicken: Add the coated chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the sliced onion, garlic, and grated ginger. Sauté for about 2-3 minutes, until the onions are soft and fragrant.

          Add Peppers: Stir in the bell peppers and cook for another 2 minutes, allowing them to soften slightly.

            Combine Everything: Return the cooked chicken to the skillet. Add the soy sauce, oyster sauce, rice vinegar, and freshly cracked black pepper. Stir everything together and let it simmer for about 2-3 minutes, ensuring the chicken is coated with the sauce.

              Taste and Adjust: Taste your dish and adjust seasoning with salt or more pepper if desired.

                Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve hot over steamed rice or noodles.
