Ingredients

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

2 carrots, diced

1 zucchini, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

4 cups chicken broth

1 cup corn (fresh or frozen)

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Avocado slices, for topping (optional)

Instructions

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add the Vegetables: Incorporate the bell pepper, carrots, and zucchini into the pot. Sauté for about 5-6 minutes until the vegetables start to soften.

Cook the Chicken: Add the diced chicken to the pot. Season with salt, pepper, cumin, chili powder, and smoked paprika. Cook until the chicken is browned on all sides, about 5-7 minutes.

Blend in the Base: Pour in the chicken broth, diced tomatoes with green chilies, black beans, and corn. Stir well to combine all the ingredients.

Simmer the Soup: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 20-30 minutes, allowing the flavors to meld and the chicken to cook through.

Final Taste Adjustments: Taste the soup and adjust seasonings with additional salt, pepper, or spices as desired.

Serve: Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor. Top with avocado slices if desired.

                Prep Time: 15 minutes | Total Time: 1 hour | Servings: 6-8
