Ingredients
  

1 pound of your favorite sausage links (pork, chicken, or plant-based)

1 cup BBQ sauce (homemade or store-bought)

1 bell pepper (any color), sliced

1 medium red onion, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven: Set your oven to 400°F (200°C) and let it preheat while you prepare the sausages and vegetables.

    Prep vegetables: In a large bowl, combine the sliced bell pepper and red onion with olive oil, garlic powder, salt, and pepper. Toss until the vegetables are well coated.

      Prepare sausages: Place the sausage links in a baking dish. Pour half of the BBQ sauce over the sausages, ensuring they are well coated.

        Combine: Add the seasoned vegetables around and on top of the sausages in the baking dish.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 15 minutes, basting the sausages with the remaining BBQ sauce halfway through.

            Finish and serve: Once the sausages are cooked through and caramelized, remove from the oven. Let them rest for a few minutes before serving. Garnish with fresh parsley and serve with additional BBQ sauce on the side.
