Ingredients

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon balsamic vinegar

4 large burrata balls (about 4 oz each)

Fresh basil leaves, for garnish

12 mini slider buns

1/2 cup pesto

Arugula or spinach, for topping

Optional: Red pepper flakes for a spicy kick

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Roast the Tomatoes: In a baking dish, combine the halved cherry tomatoes with olive oil, salt, pepper, and balsamic vinegar. Toss gently to coat. Spread them evenly in the dish and roast in the preheated oven for 20 minutes, or until blistered and slightly caramelized.

Prepare the Sliders: While the tomatoes are roasting, slice the mini slider buns in half. If desired, lightly toast them in a skillet or oven until golden brown for extra flavor.

Assemble the Sliders: Spread a layer of pesto on the bottom half of each slider bun. Place a dollop of the roasted tomatoes on top of the pesto, followed by a burrata ball (squeeze gently to break open for a creamy filling).

Garnish: Top the burrata with fresh basil leaves and a sprinkle of red pepper flakes if using. Add a small handful of arugula or spinach on top for green freshness.

Top and Serve: Cover each slider with the top half of the bun. Arrange the sliders on a serving platter and drizzle with additional balsamic if desired.

Enjoy! Serve immediately and enjoy your Delicious Roasted Caprese Burrata Sliders, garnishing with extra basil and a side of any leftover roasted tomatoes.
