Ingredients

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup diced pimentos (drained)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

1 cup crushed tortilla chips (for coating)

Fresh parsley or chives, for garnish

Instructions

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and diced pimentos.

Add the mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, cayenne pepper (if using), salt, and pepper.

Mix all the ingredients thoroughly until well combined and creamy. You can use a spatula or an electric mixer for a smoother consistency.

Once mixed, refrigerate the pimento cheese mixture for about 30 minutes to firm up.

After chilling, use a tablespoon or a small cookie scoop to form the mixture into bite-sized balls.

Roll each cheese ball in the crushed tortilla chips until fully coated.

Place the coated cheese bites on a serving platter.

Garnish each bite with a small sprig of fresh parsley or chives for a pop of color.

Serve with crackers, celery sticks, or enjoy them as they are!
