Method
Start by preparing your ingredients; peel and dice the mangoes and slice the banana.
In a blender, combine the diced mangoes, banana slices, coconut milk, Greek yogurt, honey (or maple syrup), spinach (if using), and chia seeds.
Add the ice cubes to the blender.
Blend on high speed until smooth and creamy, about 30-45 seconds. If the smoothie is too thick, you can add a little more coconut milk to reach your desired consistency.
Taste the smoothie and adjust sweetness with more honey or maple syrup if desired.
Pour the smoothie into chilled glasses. Garnish with fresh mango slices or a sprinkle of chia seeds on top if you like.
