Ingredients
  

2 cups of romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 cup bell peppers (red, yellow, or orange), diced

1/2 cup red onion, finely chopped

1 cup fresh mozzarella balls, halved or diced

1/2 cup black olives, sliced

1/4 cup fresh basil, chopped

1/4 cup parsley, chopped

1/2 cup artichoke hearts, quartered (canned or marinated)

Salt and pepper, to taste

1/4 cup balsamic vinaigrette

1/4 cup extra virgin olive oil

1 tablespoon lemon juice

Optional: 1/2 teaspoon crushed red pepper flakes for heat

Instructions
 

Prepare the Vegetables: Wash and dry all fresh vegetables. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, diced cucumber, bell peppers, and red onion.

    Add the Cheeses & Olives: Gently mix in the fresh mozzarella balls and sliced black olives into the salad.

      Incorporate Herbs and Artichokes: Add the chopped basil, parsley, and quartered artichoke hearts to the bowl.

        Dress the Salad: In a small bowl, whisk together the balsamic vinaigrette, extra virgin olive oil, and lemon juice. If you like a little heat, incorporate the crushed red pepper flakes.

          Combine and Season: Pour the dressing over the salad mixture and toss everything together until well coated. Season with salt and pepper to taste.
