4 boneless, skinless chicken thighs

1 cup Hawaiian BBQ sauce (store-bought or homemade)

1 cup fresh pineapple, diced

1 red bell pepper, sliced

1 small red onion, thinly sliced

4 brioche or hamburger buns

1 cup coleslaw mix

2 tablespoons mayonnaise

1 tablespoon lime juice

1 tablespoon chopped fresh cilantro (optional)

Salt and pepper to taste

Olive oil for grilling

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with half of the Hawaiian BBQ sauce. Mix well to coat the chicken and refrigerate for at least 30 minutes, or overnight for more flavor.

    Prepare the Coleslaw: In another bowl, mix the coleslaw mix, mayonnaise, lime juice, and cilantro. Season with salt and pepper to taste. Set aside in the refrigerator to chill.

      Grill the Chicken and Vegetables: Preheat a grill or grill pan over medium-high heat. Brush the grill with olive oil. Once hot, place the marinated chicken thighs on the grill. Cook for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. In the last few minutes of grilling, add the sliced red bell pepper and red onion to the grill, cooking until slightly charred and tender.

        Glaze the Chicken: During the final minutes of grilling, brush the remaining BBQ sauce over the chicken, allowing it to caramelize slightly.

          Toast the Buns: While the chicken is finishing up, lightly toast the brioche or hamburger buns on the grill for about 1-2 minutes until golden brown.

            Assemble the Sandwiches: On the bottom half of each toasted bun, place a grilled chicken thigh, followed by a generous scoop of the grilled bell peppers and onions. Top with the prepared coleslaw and then place the other half of the bun on top.
