1 package of puff pastry (2 sheets, thawed)

4 large eggs

1 cup cooked and crumbled breakfast sausage

1 cup shredded cheddar cheese

1/2 cup diced bell pepper (any color)

1/2 cup diced onion

1/4 cup milk

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1 egg (for egg wash)

Optional: fresh parsley or chives for garnish

Preheat Your Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Cook the Filling: In a large skillet over medium heat, sauté the diced onion and bell pepper until softened, about 3-4 minutes. Add the cooked breakfast sausage and stir to combine. Remove from heat.

      Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper. Pour this mixture into the skillet with the sausage and vegetables. Cook over medium-low heat, stirring gently until the eggs are just set, about 4-5 minutes. Remove from heat and allow to cool slightly.

        Prepare the Puff Pastry: Lightly flour a surface and roll out the puff pastry sheets if they aren’t pre-rolled. Cut each sheet into four equal rectangles.

          Assemble the Strudels: Take one rectangle of pastry and place a generous spoonful of the egg and sausage mixture in the center. Sprinkle a tablespoon of cheddar cheese on top. Fold the pastry over the filling to create a pocket and press the edges well to seal. Optionally, crimp the edges with a fork for a decorative touch. Repeat with the remaining pastry rectangles.

            Egg Wash: Beat the additional egg and brush the mixture over the top of each strudel for a shiny finish.

              Bake: Place the strudels on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until they are golden brown and puffed.

                Serve: Remove from the oven and let cool for a couple of minutes. Serve warm, garnished with chopped parsley or chives if desired.
