2 cups grated zucchini (about 2 medium zucchinis)

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon salt

½ cup chopped walnuts or pecans (optional)

½ cup raisins or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper.

    In a large bowl, combine the grated zucchini with the granulated and brown sugar. Mix well and let it sit for about 10 minutes to draw out moisture.

      In a medium bowl, whisk together the oil, eggs, and vanilla extract until fully combined.

        In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, and salt. Combine wet and dry ingredients gently until just combined; do not overmix.

          Fold in any optional ingredients like nuts, raisins, or chocolate chips at this stage.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                Once done, allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
