For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp pure vanilla extract

1 cup boiling water

For the Cherry Filling:

2 cups dark sweet cherries (fresh or frozen, pitted)

1/2 cup granulated sugar

1 tbsp cornstarch

1 tbsp lemon juice

1 tsp vanilla extract

For the Whipped Cream:

2 cups heavy whipping cream

1/2 cup powdered sugar

2 tsp vanilla extract

For Decoration:

Chocolate shavings

Fresh cherries for garnish

Instructions
 

Prepare Chocolate Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined.

          - Carefully stir in the boiling water (the batter will be thin).

            - Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

              - Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

                Prepare Cherry Filling:

                  - In a medium saucepan over medium heat, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract.

                    - Cook while stirring until the mixture starts to thicken, about 5–7 minutes. Remove from heat and let it cool.

                      Make Whipped Cream:

                        - In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on medium-high speed until soft peaks form.

                          Assemble the Cake:

                            - Once the cakes have cooled completely, slice each cake in half horizontally, creating four layers in total.

                              - Place one layer on a serving plate. Spread a layer of whipped cream and then a generous amount of cherry filling.

                                - Repeat with the next layer and continue stacking (you can alternate between whipped cream and cherry filling as desired).

                                  - Once all layers are stacked, cover the entire cake with the remaining whipped cream.

                                    Decorate:

                                      - Garnish the top with chocolate shavings and arrange fresh cherries creatively for decoration.
