1 cup cottage cheese

4 large eggs

1 cup milk

1 cup spinach (fresh or frozen, chopped)

1 bell pepper (diced)

1 small onion (diced)

1 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Optional: fresh herbs (like parsley or chives) for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish or baking dish with cooking spray or olive oil.

    Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté until the vegetables are soft, about 5-7 minutes. If using fresh spinach, add it in the last 2 minutes of cooking. Remove from heat and let cool slightly.

      Combine Wet Ingredients: In a large mixing bowl, whisk together the cottage cheese, eggs, and milk until smooth. Stir in garlic powder, dried oregano, salt, and pepper.

        Incorporate Vegetables and Cheese: Add the sautéed vegetables and shredded cheese into the egg mixture. Gently fold everything together until well combined.

          Bake the Quiche: Pour the mixture into the prepared baking dish. Use a spatula to spread it evenly. Bake in the preheated oven for 35-40 minutes or until the quiche is set in the center and slightly golden on top.
