2 boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 onion, finely chopped

2 cloves garlic, minced

1 cup low-sodium chicken broth

8 oz cream cheese, softened

1 cup shredded cheddar cheese (optional, for serving)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Tortilla chips (for serving)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot.

    Add the Ingredients: Layer on top the black beans, corn, diced tomatoes (with their juice), taco seasoning, chopped onion, minced garlic, and chicken broth.

      Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

        Shred the Chicken: Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.

          Melt the Cream Cheese: Add the softened cream cheese to the crockpot, stirring until it melts and gets creamy, combining with the chili mixture.

            Serve: Ladle the chili into bowls and top with shredded cheddar cheese, fresh cilantro, a dollop of sour cream, and serve with tortilla chips for dipping.
