2 pounds beef stew meat, cut into bite-sized pieces

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon salt

½ teaspoon black pepper

2 cups carrots, sliced

1 cup mushrooms, sliced

2 cups wide egg noodles

Fresh parsley, chopped for garnish (optional)

Instructions
 

Brown the Beef: In a skillet over medium-high heat, heat the olive oil. Add the beef stew meat and brown it on all sides, about 5-7 minutes. Transfer the beef to the crockpot.

    Sauté the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until the onions are translucent, about 3-4 minutes. Add them to the crockpot with the beef.

      Add the Flavorings: Pour in the beef broth and Worcestershire sauce. Sprinkle in the thyme, rosemary, salt, and pepper. Stir to combine all the ingredients.

        Add the Veggies: Layer the sliced carrots and mushrooms on top of the beef mixture.

          Cook: Cover the crockpot with the lid and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.

            Prepare the Noodles: About 30 minutes before serving, cook the wide egg noodles according to package instructions. Drain and set aside.

              Combine and Serve: Once the beef and vegetables are cooked, stir in the cooked egg noodles until well combined. Adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
