12 oz (340g) penne pasta

1 lb (450g) Italian sausage (mild or spicy, your choice)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the olive oil. Remove the casing from the Italian sausage and crumble the sausage into the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
