Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 small onion, finely chopped

4 cloves garlic, minced

1 cup sliced pepperoncini peppers (jarred or fresh)

1 cup chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions

Season the Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Onions and Garlic: In the same skillet, add chopped onion and sauté for 3-4 minutes until fragrant and translucent. Add minced garlic and cook for an additional 30 seconds.

Add Peppers and Broth: Stir in the sliced pepperoncini and chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a simmer.

Make the Creamy Sauce: Reduce the heat to medium-low, then add the heavy cream, Italian seasoning, and Parmesan cheese. Stir until the cheese melts and the sauce is creamy.

Combine Chicken and Sauce: Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for 2-3 minutes to reheat the chicken and meld the flavors together.

Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve hot over rice, pasta, or with crusty bread for dipping into the delicious sauce.
