2 cups Greek yogurt (plain or vanilla)

1/2 cup creamy peanut butter

1/2 cup honey or maple syrup

1 tsp vanilla extract

1/4 tsp salt

1/2 cup mini chocolate chips (optional)

1/4 cup crushed peanuts (optional, for topping)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and salt. Use a whisk or electric mixer to blend everything together until smooth and creamy.

    If you’re using mini chocolate chips, fold them into the yogurt mixture until evenly distributed.

      Line a 9x5 inch loaf pan with parchment paper, allowing some overhang for easy removal.

        Pour the peanut butter yogurt mixture into the prepared pan and spread it evenly using a spatula.

          Sprinkle crushed peanuts on top if desired for an extra crunch.

            Place the pan in the freezer and freeze for about 4-6 hours or until firm.

              Once frozen, remove from the freezer and lift the bars out using the parchment paper overhang. Cut into squares or bars with a sharp knife.

                Store any leftovers in an airtight container in the freezer.
