Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Prep the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.

Sauté Garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Make the Creamy Sauce: Pour in the heavy cream and stir well, scraping any browned bits from the bottom of the skillet. Reduce the heat to low and add the pesto. Stir until combined and simmer for 2-3 minutes.

Combine and Add Cheese: Add the halved cherry tomatoes and Parmesan cheese to the sauce, mixing until the cheese is melted and the sauce is creamy.

Return Chicken to Skillet: Place the cooked chicken breasts back into the skillet and coat them in the creamy sauce. Let it simmer for an additional 2-3 minutes to allow the flavors to meld.

Garnish and Serve: Remove from heat, garnish with fresh basil leaves, and serve with pasta, rice, or a fresh salad.
